Vegan Rice and Eggplant Curry

Hey there! How are you today? :) I was waiting for these summer days sooo much and now it's kind of dissapointing because it's so cold here in Lithuania... It's almost middle of the summer and I haven't opened my swimming season yet! What a shame. I hope it will get warm soon and we will have amazing time here in this beautiful nature...

Today I'm sharing with you my vegan lunch - rice with eggplant and tomato souce, it was so good and so simple to make!
You will need:
some spicies (curry, red pepper powder, cinnamon, salt, ground pepper)
1 medium eggplant 

0,5 cup of rice
3-4 spoons of natural tomato sauce
2 cloves of garlic

fresh salad. 

Just cut the eggplant, sprinkle with salt and leave for 30 minutes, after that wash eggplant pieces with water.
Bring to a boil rice. 
Heat the pan on medium heat, add vegetable oil, some spicies as curry, red pepper powder, a little bit of cinnamon, stir and add the eggplant cubes in the pan, cook until tender, add 2 cloves of chopped garlic, stir. Pour a speckle of water and add 3-4 spoons of natural tomato sauce, add salt and ground pepper, enjoy with fresh salad :)
